Ingredients:
2 cups filtered (chlorine-free) water
1 tablespoon sea salt or pink Himalayan salt
1 small cucumber (or carrots, radishes, etc.)
1–2 garlic cloves (optional)
Fresh dill, mustard seeds, or other spices (optional)
1–2 grape or bay leaves (optional, for crispness)
Instructions:
Dissolve salt in filtered water to make the brine.
Pack vegetables and herbs into a clean glass jar, leaving an inch of headspace.
Pour in the brine, ensuring everything is submerged.
Cover loosely with a lid or cloth. Let it sit at room temperature for 5 to 7 days.
Taste test starting on day 3. Once it reaches your preferred tanginess, seal and refrigerate.
Drink a small shot daily, add to dressings, or use as a tangy marinade.
